Cowboy Stew

Wintertime is the best time for thick, hearty stews, and this is a great one. It’s very easy to put together and it’s very filling and delicious. This is one of my go-to “it’s cold outside” recipes. You can make it on the stove or throw everything together in the crock pot for a dinner that’s ready when you get home from work. Whip up some cornbread and you’ve got a complete meal that your family will love.

Cowboy Stew

1 1/2 lbs. ground beef
1 onion, chopped
1 green bell pepper, chopped
4 medium potatoes, cubed (peeled or unpeeled)
4 carrots, peeled and sliced
2 ribs celery, chopped
1 can Rotel diced tomatoes and green chiles
1 can ranch style beans
1 can corn, drained
1 can tomato soup
1 can diced green chiles
1 clove chopped garlic
1/2 tsp. sugar
salt and pepper, to taste
3 c. water

Brown beef and drain. Transfer to a large pot or crockpot and add remaining ingredients. If cooking on the stove, cover and simmer about one hour, stirring occasionally. If cooking in the crock pot, cook on low 8 hours or on high 4 to 5 hours, or until potatoes and carrots are tender. Serve with cornbread.
